Cider Bellini
From “101 Champagne Cocktails” by Kim Haasarud
Moët & Chandon Imperial
1oz Apple Juice
1oz Simple Syrup
1/2oz Cognac
Dash of Ground Cinnamon
Dash of Ground Allspice
Dash of Ground Cloves
Thin Red Apple Slice, for garnish
Place red apple slice in champagne flute and set aside. Combine the apple juice, simple syrup, cognac, cinnamon, allspice, and cloves in a cocktail shaker with ice. Shake vigorously, and strain into the champagne flute over the red apple slice. Top off with champagne.
Cherry Chiller

2 basil leaves, sliced into thin strips
3 pitted bing cherries, plus 2 extra for garnish
0.5 oz gin (i.e. Plymouth)
0.5 oz simple syrup
0.5 oz lime juice
3-4 oz Moët & Chandon Rose Imperial
Combine the basil, cherries, lime juice, gin and simple syrup in a mixing glass. Muddle. Top with ice and shake vigorously. Pour contents into a highball glass and top with Moët & Chandon Rose Imperial.
Poinsettia Cocktail

1/2 oz Orange Liqueur (eg. Grand Marnier, Triple Sec)
3oz Cranberry Juice
Orange Twist
Moët & Chandon Rosé Impérial
In a champagne flute, combine the orange liqueur and the chilled cranberry juice. Add the orange twist, top with champagne, and serve.
Kumquat Peche

1 Ripe Kumquat, sliced
5 Mint Leaves, plus an additional Mint Sprig for garnish
1oz Crème de Peche Liqueur (similar to Peach Schnapps)
3oz Moët & Chandon Nectar Impérial
Combine the kumquat, mint, and crème de peche liqueur, and orange juice in a cocktail shaker with ice. Shake vigorously and pour into a highball glass. Add more ice and top off with champagne. Stir and garnish with an additional mint sprig.
